Eggplant Sweet Potato Burgers

I recently went to a party where your typical cookout food was being served… macaroni salad dripping with some sort of white liquid-like sauce, giant hamburgers still pink in the middle and tons of MMT’s, or mystery meat tubes (I believe the common name for them is “hotdogs”) wrapped in those horrid individually wrapped cheese slices. For something different, I decided to BYOB (yes, that’s – Bring Your Own Burger, of course); so I brought these sweet potato eggplant burgers. Let me tell you, everyone loved them and asked for this recipe!


These eggplant/sweet potato burgers are nothing short of incredible. The addition of pine nuts or roasted cashews bulks them up so you can get a bit more crunch. Eat them in front of your next cookout crowd.

Ingredients

  • 1 eggplant
  • 1 sweet potato
  • 1 cup Panko break crumbs
  • 1/2 cup cashews or pine nuts (or a mix of both!), finely chopped. Roasted or raw.
  • 1 egg
  • 1 clove of garlic, minced
  • 1 tsp Kosher salt and 1/4 tsp pepper
  • 1 tsp parsley
  • a splash of olive oil for sautéing

Directions

Cook the sweet potato. You can either boil it until tender or bake it in the oven. While the sweet potato is cooking, peel and chop eggplant. Add a splash of olive oil to pan and sauté over medium heat for about 8-10 minutes. When you sweet potato is done, remove the skin and cut into cubes.

In a mixing bowl, combine sweet potato and eggplant and mash well. Add egg, nuts, salt, pepper, parsley and garlic. When you are ready to cook the patties add the breadcrumbs and mix. (You don’t want the breadcrumbs to sit in the mixture too long before cooking!)

Shape mixture into patties and add olive oil to frying pan. Cook each side about 5 minutes over medium heat.
